The Ham was made by making a brine and soaking the meat for 8 days. BRINE 2 tablespoons of salt 1 Tablespoon of white sugar 1 Tablespoon of salt peter (acute powder) Bring !liter of water to the boil and add salt sugar and salt peter heat until they are dissolved,leave to cool and in a plastic place the meat and pour over the brine put in the bottom of the ref for 4-21 days. I cooked mine in freshwater in a pressure cooker for 20 mins and let the pressure comedown on its own.If you boil conventionally I would say simmer for 1 1/2 hours. 3 Link to comment Share on other sites More sharing options...
