I think it would be great if you had a totilla party when I eventually get there mate.  That would be a good gesture on your part.

That is pretty close to my recipe. I make more tortillas  (about 14 -16) because I like them so much. I make mine large and thicker.

I eat the last one as soon as its done with butter. I eat the others with my breakfast or just with peanut butter and jam until they're all gone.

Good for you that you make your own.

I'm looking for a recipe for corn tortillas that "Y" can make (What?  ME cook?)  I find flour tortillas to not be as tasty as the corn ones.  Anyone have an easy recipe for them?

I suppose that you could add some more ingredients like coriander make them thicker and try making nan bread.

I was looking for them also in all the grocery stores here in Cebu and no luck. So I just returned from the states and in my checked bag I had a 36 count flour tortillas pack and an 16 count whole wheat tortillas pack. Funny thing in Dec I was in Pampanga heading back to USA and the corner store called Johnnys as soon as I walked in there was a display of all the flour tortillas in the Philippines!!! I was surprised for sure but I was headed back to USA so they were useless to me! I like the breakfast tacos myself,with scrambled egg,sausage and spicy picante sauce,yummy!

I used to cook at an Indian restaurant so I can make good chapatis and puris.  I was taught, in 3rd or 4th grade, how to cook tortillas by a Mexican teacher (tortillas were very "ethnic" back then ha ha).  I still do them the same way she showed us - which is the same way you cook chapati.

 

Put them in a dry pre-heated pan (one of the rare times you pre-heat a pan).  Flip once during heating. When it starts to from small bubbles remove from pan and hold on the spider (hob?) directly above the flame.  If made and heated properly they will inflate. Then put on plate, covering with a towel.  They will deflate but be soft & fluffy.

 

When I cooked for Chili's we just had a steam drawer we kept tortillas in.  No real cooking, just a steamer... works great... but who has a steam drawer at home ha ha 

 

Corn tortillas are better (I think) and not any harder to make.  But here it would be very hard to find the right ingredients.  I still cannot find masa harina for my chili. Corn tortillas are pretty much just masa harina and water. Masa harina is corn flour that has been treated with slaked lime. Not lime the fruit - lime the chemical. No one over here seems to have heard of masa. 

 

Today at SM I was looking for canned lima beans and green beans.  They had neither BUT they had canned pinto beans and refried beans. First time I have seen either of those here. Only bought 3 cans of refried...should have bought more (did not know if they were any good).  Anyway... I grilled up some pork with bell peppers, chopped up cheese, some salsa, and made flour tortillas.  Tacos for dinner!  Man, it has been a while.  Not as good as Tijuana street corner - but pretty good for the PI's. :tiphat:
