BUT, But and I stated this in another Post give me bangers and mash.jpg or liver and onions.jpg EVEN fish and chips.jpg Then we are talking Recipes (to me anyway) :smile:

Yes, pork, beef and/or goat can be done this way. The spices used and the wood may give it a local flavour. Our family used citrus wood but mesquite wood is also very good. Mesquite is used in Texas BBQs. I've never had pork done this way. 

So, how did you like it?

It tasted superb. Having said that, given the provenance, how could it not be?

That evening we had the local equivalent of fine dining in a restaurant on piles in the middle of the mangroves. The main dish was crab, one for each of us with shells the size of a hubcap.

There is a certain recipe for doing this which includes seasoning and certain kinds of wood. 

The next day after church, the women would start cooking the other food while the men dug up the meat. 

The whole afternoon would be beer drinking and eating and finally a Poker game. I think there was a $5 limit and when that was gone you could not pull out more money.  it was all in fun and that is how I learned to play cards.

I love to remember that part of my childhood.

I went to a 'Hungi' many years ago, cooked by NZers and the food was great, all cooked in the pit.

Thanks Mogo and yes I have a good memory of the pleasant things in my life.

I try not to dwell on the bad things. There are  many.

Pleasant things,,,,, dreaming of life back home in So California
