I find that also try to make a sun side up the yolk breaks but when you want an omelette yolks are fine. I now try to buy anywhere but the supermarkets.

Yeah, I hear you. Seems to be the same for me. The opposite of your desire becomes the norm...

I tried buying from some local shops nearby and had mixed results. One time I had four out of twelve actually turn out to be rotten - I mean totally. So I am back to buying Jewm eggs or some others from a local sari sari store that are almost always fine.

A method to keep unrefrigerated eggs okay is to turn them all upside down every four days. I don't know why this works, but it worked for me on the yacht and also works here. However, when they get older than a couple weeks, the yolks still do not hold up.

So very true, we gave up a while back now buy only fresh free range, bought 30 yesterday P350. Same with chicken, invested a few thousand and now eat only our own chicken, boy were they tough. Had to invest further in a pressure cooker, problem solved.

Put your egg in a mug of water.  If it is old it'll float.

Those are tourist eggs, stop buying eggs in the mall supermarkets and start buying them in street market trays the way locals do.  Native eggs are the best, but the smallest, and by far the priciest. You don't even need a tray, they're so tough you can just carry them in a bag.

I respectfully disagree, Shady. I was buying street market eggs for a while and ended up with a number of rotten ones. I have had best luck at SM, but only with that one brand, Jewm. According to L, they actually test each egg visually with a bright light and cull the bad ones... But then, I have had a lot of good ones from street vendors at times too. So I guess our mileage may vary???
