Recipe For Piccalilli Pickle

I made this the other day and am over the moon with it.

 

25g fine salt

30g cornflour

10g turmeric

1TSP mustard seeds

1/2 tsp of cumin

1/2tsp coriander

300ml white vinegar

75g white sugar

25g honey optional.

 

Put vinegar in a pan bring to the boil add ingredients slowly stirring all the time. For the vegetables I used a jar of Sevilla sweet mixed pickles and some of the small silverskin pickled onions. I am very pleased with this recipe and if you want it a bit more mustardy you can add yellow mustard a bit at a time  to suit your taste. Corned beef next week will let you know the results.

Hey Kevin, I'm coming right over mate!  Haven't had corned beef in a looong time and with your homemade Piccalilli Pickle, I will be over your moon in no time flat.....he, he.

You even gave us a tongue twister: piccalilli, piccalilli, piccalilli, piccalilli...... pickle.  I'm sure BrettGC appreciates this exercise as well as I do......he, he.

Have a couple of Aussie mates here in Pattaya that make their own Corn Beer and it is great, the pickles would top it off of course!

Should be easy enough to get ingredients there Aussie food is much like UK  food

Never had vegimite but have been told that it is much like marmite I am not sure

I like mustard piccalilli but not the sweet one! Absolutely gorgeous with a nice strong cheddar, better than Branston in my opinion. I love corned beef too, with pickled beetroot it is a marriage made in heaven!

I also love marmite, not tried vegemite so cannot comment but I imagine they are fairly similar!
